Instructions

  1. Season Chicken: Pat the chicken breasts dry with a paper towel and evenly season both sides with Cajun seasoning and salt and pepper to taste.
  2. Sear Chicken: Heat oil in a hot skillet over medium-high heat. Add the chicken breasts and sear for 5 to 6 minutes per side, or until fully cooked through and golden brown on the outside. Remove from skillet and let them rest for a few minutes, then slice into strips.
  3. Cook Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water, then drain the spaghetti.
  4. Sauté Garlic: In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  5. Make Sauce: Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2 to 3 minutes to slightly thicken. Gradually stir in the shredded mozzarella cheese until melted and the sauce is creamy.
