Description

A decadent no-bake cheesecake that perfectly combines the rich flavors of tiramisu with bold cold brew coffee. This creamy dessert features a buttery graham cracker crust, smooth coffee-infused cream cheese filling, and a dusting of cocoa powder for an elegant finish. Ideal for coffee lovers seeking a luscious and refreshing treat.

Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar

Cheesecake Filling

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup cold brew coffee
  • 1 tablespoon coffee liqueur (optional)
  • 1 teaspoon espresso powder

Garnish

  • 2 tablespoons cocoa powder for dusting
  • Shaved chocolate for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust.
  2. Prepare Crust Mixture: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
  3. Bake the Crust: Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and let it cool completely.
  4. Beat Cream Cheese: In a large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.
  5. Add Sugar: Gradually add powdered sugar to the cream cheese, beating continuously until fully combined, scraping down the sides as needed.
  6. Incorporate Flavorings: Add vanilla extract, cold brew coffee, and optional coffee liqueur to the cream cheese mixture. Beat until well blended and smooth.
  7. Whip Heavy Cream: In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
  8. Dissolve Espresso Powder: Dissolve espresso powder in 2 tablespoons of hot water, then gently fold this mixture into the cheesecake filling.
  9. Assemble Cheesecake: Pour the filling over the cooled crust in the springform pan and smooth the top with a spatula.
  10. Chill to Set: Cover the pan with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow the cheesecake to set properly.
  11. Garnish: Before serving, dust the top with cocoa powder and optionally garnish with shaved chocolate.
  12. Serve: Carefully remove the sides of the springform pan, slice, and serve the cheesecake chilled.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling.
  • The coffee liqueur is optional but adds depth to the coffee flavor.
  • Use cold brew coffee for a richer, smoother coffee taste without bitterness.
  • Allowing the cheesecake to chill overnight enhances the texture and flavor.
  • For a firmer crust, press it firmly and bake thoroughly before adding the filling.
