Ingredients
Scale
Crust
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
Cheesecake Filling
- 2 (8 oz) packages cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup cold brew coffee
- 1 tablespoon coffee liqueur (optional)
- 1 teaspoon espresso powder
Garnish
- 2 tablespoons cocoa powder for dusting
- Shaved chocolate for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the crust.
- Prepare Crust Mixture: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Bake the Crust: Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and let it cool completely.
- Beat Cream Cheese: In a large bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.
- Add Sugar: Gradually add powdered sugar to the cream cheese, beating continuously until fully combined, scraping down the sides as needed.
- Incorporate Flavorings: Add vanilla extract, cold brew coffee, and optional coffee liqueur to the cream cheese mixture. Beat until well blended and smooth.
- Whip Heavy Cream: In a separate bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until no streaks remain.
- Dissolve Espresso Powder: Dissolve espresso powder in 2 tablespoons of hot water, then gently fold this mixture into the cheesecake filling.
- Assemble Cheesecake: Pour the filling over the cooled crust in the springform pan and smooth the top with a spatula.
- Chill to Set: Cover the pan with plastic wrap and refrigerate for at least 4 hours or preferably overnight to allow the cheesecake to set properly.
- Garnish: Before serving, dust the top with cocoa powder and optionally garnish with shaved chocolate.
- Serve: Carefully remove the sides of the springform pan, slice, and serve the cheesecake chilled.
Notes
- Ensure the cream cheese is softened to room temperature for a smooth filling.
- The coffee liqueur is optional but adds depth to the coffee flavor.
- Use cold brew coffee for a richer, smoother coffee taste without bitterness.
- Allowing the cheesecake to chill overnight enhances the texture and flavor.
- For a firmer crust, press it firmly and bake thoroughly before adding the filling.
