Scale
Pie Filling
- 2 cups cooked and mashed sweet potatoes (about 2 large potatoes)
- 1 can (14 ounces) sweetened condensed milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup melted butter
Pie Crust
- 1 unbaked 9-inch pie crust
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the pie.
- Prepare sweet potatoes: Wash sweet potatoes thoroughly, peel them, and cut into chunks to speed up cooking.
- Boil sweet potatoes: Boil the sweet potato chunks in a large pot of water for 15-20 minutes until soft and tender. Drain and mash them until smooth. Let cool slightly.
- Mix filling base: In a large bowl, combine the mashed sweet potatoes and sweetened condensed milk. Whisk or use a hand mixer to blend until smooth and free of lumps.
- Add eggs: Incorporate eggs one at a time, mixing well after each addition to achieve a creamy texture.
- Add flavorings: Stir in vanilla extract, ground cinnamon, and ground nutmeg until fully combined.
- Add melted butter: Pour in melted butter and mix thoroughly to incorporate all ingredients.
- Fill the crust: Pour the sweet potato mixture evenly into the unbaked 9-inch pie crust, spreading with the back of a spoon.
- Bake the pie: Place the pie on the middle rack of the oven and bake for 45-50 minutes until the filling is set and a toothpick inserted in the center comes out clean.
- Cool the pie: Remove from oven and allow the pie to cool on a wire rack at room temperature, helping it to set properly.
- Serve: Once cooled, slice and serve. Optionally, add whipped cream as a topping.
Notes
- Boiling sweet potatoes beforehand ensures a smooth, creamy filling.
- Do not overmix the batter to prevent toughening of the filling.
- Use a toothpick test to check for doneness; it should come out clean.
- Allowing the pie to cool completely helps with slicing and texture.
- For added flavor, you can sprinkle a little extra cinnamon or nutmeg on top before serving.
