Description

This Salmon Teriyaki Bowl is a vibrant and healthy meal featuring crispy air-fried salmon cubes marinated in a sweet and savory coconut aminos glaze. Served over brown rice with edamame, creamy avocado, and a spicy yogurt sauce, this dish combines delightful textures and rich flavors for a quick, nutritious dinner.

Ingredients

Scale

Salmon and Marinade

  • 2 salmon filets (Atlantic, King, or Sockeye)
  • 2 Tbsp coconut aminos
  • 1 Tbsp honey
  • 1 tsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp sea salt
  • 1 tsp olive oil
  • ½ tsp chipotle powder
  • ½ tsp paprika

Base and Toppings

  • 2 cups cooked brown rice
  • ½ cup cooked edamame
  • ½ avocado, sliced

Spicy Yogurt Sauce

  • ¼ cup yogurt
  • 1 tsp hot sauce

Instructions

  1. Prepare the Salmon: Pat the salmon filets dry using paper towels and cut them into 2-inch cubes to ensure even cooking and crispiness.
  2. Make the Marinade: In a medium bowl, combine coconut aminos, honey, sesame oil, garlic powder, and sea salt. Mix well to form a balanced savory and sweet marinade. Reserve about a tablespoon of this mixture to drizzle on the final dish later.
  3. Marinate the Salmon: Place the salmon cubes into the bowl with the marinade and toss gently to coat all pieces. Let them marinate for at least 3 minutes to absorb the flavors.
  4. Air Fry the Salmon: Preheat your air fryer to 400°F (204°C). Arrange the marinated salmon cubes in a single layer inside the air fryer basket. Air fry for about 7 minutes, or until the salmon is cooked through and crispy on the outside.
  5. Prepare the Spicy Yogurt Sauce: While the salmon cooks, mix the yogurt, hot sauce, chipotle powder, and paprika in a small bowl. Stir well to create a creamy and spicy sauce to accompany the bowl.
  6. Assemble the Bowl: Start with a base of cooked brown rice in serving bowls. Layer the crispy salmon cubes on top, followed by the cooked edamame and sliced avocado. Drizzle the reserved marinade and the spicy yogurt sauce over the assembled ingredients for added flavor.

Notes

  • Marinate the salmon cubes for at least 3 minutes; longer marination up to 15 minutes can enhance flavor but avoid too long to prevent texture change.
  • If you don’t have an air fryer, salmon can be pan-seared or baked at 400°F for 10-12 minutes as alternatives.
  • Use coconut aminos as a soy sauce alternative to keep this dish gluten-free.
  • You can adjust the amount of hot sauce in the yogurt sauce depending on your spice preference.
