Description

A quick and easy one-pot garlic shrimp tortellini recipe combining succulent shrimp scampi, tender cheese tortellini, and savory Mediterranean flavors with sun-dried tomatoes, marinated artichoke hearts, and fresh basil. Ready in just 25 minutes, this dish is perfect for a flavorful weeknight dinner that requires minimal cleanup.

Ingredients

Scale

Seafood & Pasta

  • 1 package (12 oz) SeaPak Shrimp Scampi
  • 9 oz refrigerated cheese tortellini

Vegetables & Herbs

  • 1/4 cup fresh basil, sliced
  • 1/4 cup sun-dried tomatoes, sliced
  • 1/2 cup marinated artichoke hearts, chopped

Other

  • 1/4 cup water
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Cook the Shrimp Scampi: Heat a medium skillet or sauté pan over medium heat. Add the SeaPak Shrimp Scampi package contents and cook for about 5 minutes, stirring occasionally, until the shrimp are opaque and cooked through and the sauce has mostly evaporated.
  2. Add Tortellini and Vegetables: Stir in the refrigerated cheese tortellini, sliced sun-dried tomatoes, chopped marinated artichoke hearts, and 1/4 cup of water to the pan. Mix well to combine all ingredients.
  3. Simmer Until Tortellini is Cooked: Cover the pan with a lid, reduce the heat to low, and let it simmer gently for 6-8 minutes. This allows the tortellini to cook through and absorb the flavors. Stir occasionally to prevent sticking.
  4. Finish with Fresh Basil and Serve: Remove the pan from heat and stir in the fresh sliced basil. For an extra touch of flavor, sprinkle with grated Parmesan cheese before serving.

Notes

  • SeaPak Shrimp Scampi usually comes pre-seasoned with garlic butter sauce, making this dish very flavorful and quick to prepare.
  • If you prefer, use fresh cheese tortellini instead of refrigerated for a softer texture.
  • Adjust the amount of water if necessary to prevent sticking during simmering.
  • Optional Parmesan cheese adds a salty and creamy finish but can be omitted for a lighter dish.
  • This recipe can be easily doubled to serve more people.
