Description

A cozy and indulgent dessert-style savory dish featuring roasted sweet potatoes stuffed with creamy Brie cheese, toasted pecans, and topped with a tangy maple cranberry glaze. This recipe offers a perfect balance of sweet, savory, and tart flavors with a luxuriously creamy texture, ideal for a comforting autumnal or holiday treat.

Ingredients

Scale

Sweet Potato Base

  • 2 large sweet potatoes
  • 2 tbsp unsalted butter
  • 1 tbsp maple syrup
  • Salt, to taste
  • Freshly ground black pepper, to taste

Filling

  • 4 oz Brie cheese, rind removed and sliced
  • 1/4 cup pecans, chopped and toasted

Cranberry Glaze

  • 1/2 cup cranberry sauce (whole berry or smooth)
  • 1 tbsp orange juice
  • 1/2 tsp maple syrup

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to warm it up for roasting the sweet potatoes.
  2. Prep the Sweet Potatoes: Prick each sweet potato several times with a fork to allow steam to escape during roasting and place them on a baking sheet.
  3. Roast the Sweet Potatoes: Bake for 45 to 55 minutes, until they are tender and you can easily pierce them with a fork.
  4. Make the Cranberry Glaze: In a small saucepan, combine cranberry sauce, orange juice, and maple syrup. Heat on low for 5 minutes, stirring occasionally until slightly thickened.
  5. Mash the Sweet Potato Filling: Once cooled slightly, slice the sweet potatoes lengthwise and gently mash the insides with a fork. Stir in unsalted butter, maple syrup, salt, and black pepper to taste.
  6. Fill with Brie and Pecans: Spoon the creamy sweet potato mixture back into the skins, then add slices of Brie cheese and sprinkle the toasted pecans on top. The warm sweet potatoes will help melt the Brie.
  7. Glaze and Melt Brie: Drizzle the cranberry glaze over each stuffed potato, then return them to the oven for 5 to 7 minutes until the Brie is melted and bubbly.
  8. Serve Immediately: Enjoy the Maple Pecan Brie Sweet Potatoes while warm for the best creamy, crunchy, and tangy experience.

Notes

  • You can substitute honey for maple syrup if preferred.
  • Make sure to toast the pecans lightly in a dry pan to enhance their flavor and crunch.
  • If you prefer less sweetness, reduce the amount of maple syrup in the filling or glaze.
  • This dish is best served fresh but can be reheated gently in the oven.
  • Remove Brie rind if you prefer a milder cheese taste; otherwise, it can be left on.
