Ingredients
Scale
Meat
- 8 oz. turkey strips
- 6 chicken thighs
Produce
- 2 large peaches, sliced
- 1 large shallot, sliced
- 3 cloves garlic, grated or pressed
- 4 sprigs fresh thyme
- Fresh basil and additional fresh thyme for topping
Pantry
- 1 cup chicken broth
- 1 stick of butter (8 tablespoons)
- 1/2 cup honey
- 2 tsp. sea salt, divided
- 1 tsp. fresh cracked pepper, divided
- 1 tsp. oregano, divided
- 1 tsp. garlic powder
- 1/2 tsp. paprika, divided
Instructions
- Preheat Oven: Preheat your oven to 350°F to prepare for baking the chicken.
- Season Chicken: Season both sides of the chicken thighs evenly with half of the sea salt, cracked pepper, oregano, and paprika.
- Sauté Turkey: In a skillet over medium heat, sauté the turkey strips until they turn dark red and are cooked through. Remove them from the skillet and set aside.
- Sear Chicken: In the same skillet, sear the seasoned chicken thighs for 1 to 2 minutes on each side until they develop a golden crust.
- Sauté Aromatics: Remove the chicken thighs temporarily. In the same pan, add the sliced shallots and grated garlic. Sauté until they release a fragrant aroma and become translucent.
- Make Sauce: Deglaze the pan by pouring in the chicken broth, scraping up the browned bits. Stir in the butter and honey until fully melted and combined, creating a rich sauce.
- Bake Chicken: Return the seared chicken thighs to the skillet, ensuring they’re covered with the honey butter sauce. Place the skillet in the preheated oven and bake for 15 minutes to cook through gently.
- Add Peaches and Broil: After baking, arrange the sliced peaches on top of the chicken and switch the oven to broil. Broil for 3 to 5 minutes until the peaches soften and begin to caramelize slightly.
- Garnish and Serve: Remove from oven and garnish with fresh basil and additional fresh thyme sprigs before serving warm.
Notes
- You can substitute turkey strips with chicken breast strips if preferred.
- Ensure peaches are ripe but firm to avoid them becoming too mushy under the broiler.
- For a spicier option, add a pinch of cayenne pepper to the seasoning blend.
- If you don’t have fresh herbs, dried thyme and basil can be used but add them earlier in the cooking process.
- Use a cast-iron skillet for best searing results and oven safety.
