Description

Homemade Lemonies are tangy and sweet lemon bars with a soft, buttery base topped with a light lemon glaze. Easy to prepare and perfect for dessert or a refreshing snack, these lemonies combine refreshing lemon flavor with a tender crumb for a delightful treat.

Ingredients

Scale

Lemonies Base

  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt

Lemon Glaze

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by greasing it or lining it with parchment paper to prevent sticking.
  2. Cream Butter and Sugar: In a mixing bowl, cream the softened butter and granulated sugar together until the mixture is light and fluffy, which will create a tender texture in the final lemonies.
  3. Add Eggs and Flavorings: Beat in the eggs one at a time to fully incorporate. Then add the fresh lemon juice, lemon zest, and vanilla extract, mixing well to blend all flavors evenly.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and salt to ensure even distribution before combining with the wet ingredients.
  5. Combine Wet and Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients. Stir gently until just combined to avoid overmixing, which could make the lemonies tough.
  6. Pour Batter into Pan: Transfer the batter to the prepared baking pan and smooth the surface with a spatula for even baking.
  7. Bake Lemonies: Bake in the preheated oven for 25 to 28 minutes or until the edges turn golden brown and a toothpick inserted near the center comes out mostly clean.
  8. Cool the Lemonies: Allow the lemonies to cool completely in the pan on a wire rack to set properly before glazing.
  9. Prepare Glaze: In a small bowl, whisk together powdered sugar and fresh lemon juice until the glaze is smooth and pourable.
  10. Apply Glaze: Spread the lemon glaze evenly over the cooled lemonies. Let the glaze set for about 20 minutes at room temperature.
  11. Garnish and Serve: Optionally garnish with additional lemon zest or thin lemon slices. Slice into bars and serve as a zesty, refreshing dessert or snack.

Notes

  • Ensure the butter is softened for easy creaming with sugar but not melted.
  • Don’t overmix the batter once the flour is added to keep the lemonies tender.
  • Use fresh lemon juice and zest for the best flavor; bottled lemon juice won’t provide the same brightness.
  • Allow the glaze to set fully before slicing to avoid messy cuts.
  • Store lemonies in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
