Couscous

  • 1 medium cucumber, diced
  • 1 clove garlic, minced (optional)
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste


Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, minced garlic, lemon juice, chopped parsley, dill, mint, salt, and pepper. Add the chicken breasts and coat them evenly with the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes to infuse the flavors.
  2. Prepare the Couscous: Bring 1¼ cups of water with a pinch of salt to a boil. Remove from heat and stir in the couscous. Cover tightly and let it sit for about 5 minutes until the couscous absorbs the water. Fluff with a fork to separate the grains.
  3. Make the Tzatziki Sauce: In a bowl, combine the Greek yogurt, diced cucumber, minced garlic (if using), lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve, allowing the flavors to meld.
