Description

A vibrant and flavorful Easy Marinated Tomatoes recipe featuring cherry tomatoes, fresh basil, red onion, and a tangy balsamic vinaigrette. Perfect as a refreshing side or appetizer, this no-cook dish brings together sweet, tangy, and herbaceous flavors with minimal prep and no cooking required.

Ingredients

Scale

Vegetables and Herbs

  • 2 pounds Cherry tomatoes (red, orange, yellow)
  • 1 medium red onion, sliced chiffonade style
  • 1/2 cup fresh basil, chopped

Marinade

  • 1/2 cup Balsamic vinegar
  • 1/4 cup Rice wine vinegar
  • 1/4 cup Olive oil
  • 1 Tablespoon minced garlic
  • 1 Tablespoon lemon juice
  • 1 1/2 Tablespoons brown sugar
  • 1/2 teaspoon ground oregano
  • Garlic salt, to taste
  • Seasoned pepper, to taste

Instructions

  1. Prepare the tomatoes: Wash the cherry tomatoes thoroughly and drain them on paper towels to remove excess moisture.
  2. Cut tomatoes: Slice each cherry tomato in half and place them into a large mixing bowl.
  3. Slice onion: Peel the red onion and slice it chiffonade style (thin ribbons), then add it to the bowl with the tomatoes.
  4. Chop basil: Wash and finely chop the fresh basil leaves.
  5. Add garlic and mix: Add the minced garlic to the bowl with tomatoes, onions, and basil. Toss everything together gently to combine.
  6. Make the marinade: In a separate container or small bowl, blend together the balsamic vinegar, rice wine vinegar, olive oil, lemon juice, brown sugar, and ground oregano until well combined.
  7. Combine marinade with vegetables: Pour the mixed marinade over the tomato mixture and sprinkle with garlic salt and seasoned pepper to taste. Toss well to evenly coat all ingredients.
  8. Portion and serve: Transfer the marinated tomatoes into small individual glass containers for personal servings.
  9. Enjoy: Serve the marinated tomatoes chilled or at room temperature, either individually or family style, as a refreshing appetizer or side dish.

Notes

  • For best flavor, allow the tomatoes to marinate for at least 30 minutes before serving to let the flavors meld.
  • This dish is best served fresh but can be refrigerated for up to 1 day.
  • Adjust garlic salt and seasoned pepper according to your taste preferences.
  • The variety of cherry tomato colors makes this dish visually appealing.
  • Great accompaniment to grilled meats, sandwiches, or simply enjoyed with crusty bread.
