- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2/3 cup brown sugar
- 5 small eggs
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour

- 1 cup semi-sweet chocolate chips
- 1/3 cup milk, at room temperature
- 2 Tbsp cocoa powder

Instructions
- Prepare the Cake Batter: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract. In a separate bowl, sift together the flour, salt, baking powder, and cocoa powder. Gradually add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Fold in the semi-sweet chocolate chips.
- Bake the Cake: Preheat your oven to 350°F (175°C). Grease and flour a cake pan or line it with parchment paper. Pour the batter evenly into the pan and bake for approximately 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely on a wire rack.
- Make the Frosting: While the cake is cooling, blend the softened cream cheese until smooth. You may add a little sugar if you prefer a sweeter frosting, but it can be left plain for balance.
- Form the Cake Pops: Crumble the cooled cake into a large bowl. Mix in the cream cheese frosting a little at a time until the mixture holds together and is moist enough to shape. Roll the mixture into golf ball-sized balls. Place them on a lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up.
- Melt the Candy Coating: Following the package instructions, melt the candy melts in separate bowls, one for each color. Be sure not to overheat to avoid burning.
- Assemble and Decorate: Insert lollipop sticks into each chilled cake ball. Dip each cake ball into the melted candy melts, allowing excess to drip off. Immediately decorate with sprinkles before the coating hardens. Place cake pops upright in a styrofoam block or a similar holder to set completely.
