  • 1 cup sweet corn kernels (fresh or frozen)
  • 1 ½ cups long grain rice (jasmine or basmati), cooked
  • ½ cup low-sodium chicken broth
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil

  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup (adjust to taste)


Instructions

  1. Cook the Rice: Prepare rice according to package instructions. Fluff with a fork once cooked and set aside to keep warm.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken, season lightly with salt and pepper, and cook for 6–8 minutes until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add Garlic & Corn: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add sweet corn kernels and stir for 2–3 minutes until heated through.
  4. Combine with Chicken & Broth: Return the cooked chicken to the skillet, pour in the chicken broth, and stir well. Let the mixture simmer for 2–3 minutes to meld flavors.
  5. Add the Sauce: Stir in soy sauce and honey or maple syrup. Continue simmering for another 2–3 minutes until the sauce thickens slightly and coats the chicken and corn evenly.
  6. Assemble the Bowls: Spoon the cooked rice into serving bowls, top with the chicken and corn mixture, and garnish with chopped green onions.
  7. Serve Hot: Optionally, add a squeeze of fresh lime juice or sprinkle chili flakes on top to enhance the flavor before serving.
