Description

A vibrant and refreshing Cilantro Lime Slaw featuring a crunchy mix of purple and white cabbage, shredded carrots, and fresh herbs, tossed in a zesty lime and honey dressing with a hint of spice from jalapeño and chipotle. Perfect as a side dish or topping for tacos and grilled meats.

Ingredients

Scale

Vegetables

  • 3 cups shredded purple cabbage
  • 3 cups shredded white cabbage
  • 2 cups shredded carrots (OR use a 14-oz bag slaw mix in place of both cabbages and the carrot)
  • ½ cup thinly sliced green onion (about 4-5)
  • ½ cup fresh cilantro (packed, finely chopped)
  • 1 jalapeño (de-seeded and sliced, optional)

Seasoning

  • 1 teaspoon salt (for cabbage prep)
  • ½ teaspoon salt (for dressing)
  • ½ teaspoon ground cumin
  • Ground chipotle (to taste, optional)
  • Ground black pepper (to taste)

Dressing

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup lime juice
  • 1 tablespoon runny honey
  • 2 cloves garlic (minced)

Instructions

  1. Prep cabbage: Place both the shredded purple and white cabbages in a large bowl and sprinkle with 1 teaspoon of salt. Let them sit for 15 to 30 minutes to draw out excess moisture. Once the time has passed, pat the cabbage dry thoroughly with paper towels or squeeze out any remaining water for a softer and creamier slaw.
  2. Make dressing: In a separate bowl, combine the mayonnaise, sour cream, lime juice, honey, minced garlic, ground cumin, ½ teaspoon salt, and to taste ground chipotle and black pepper. Mix until smooth and well blended.
  3. Assemble salad: Add the prepped cabbages, shredded carrots (or slaw mix), thinly sliced green onions, finely chopped cilantro, and jalapeño slices into a large salad bowl. Pour the dressing over the salad ingredients and toss thoroughly to coat all components evenly. For a crisper texture and enhanced flavor, refrigerate the slaw for several hours before serving.

Notes

  • You can substitute the shredded cabbages and carrots with a ready-made 14-ounce bag of slaw mix for convenience.
  • Adjust the amount of jalapeño and chipotle powder to control the heat level according to your preference.
  • Refrigerating the slaw for a few hours helps meld the flavors and crisp up the salad.
  • This slaw pairs wonderfully with grilled meats, tacos, or as a refreshing side to any meal.
  • To reduce calories, you can substitute mayonnaise with Greek yogurt and use light sour cream.
