- 10 oz ground beef
- 1 egg
- 2 cloves garlic, peeled and minced

Instructions
- Preheat and Prepare Produce: Preheat your oven to 450°F. Wash and dry all fresh produce thoroughly. Peel and mince the garlic cloves. Roughly chop the golden raisins. Halve the Yukon Gold potatoes lengthwise, then slice them thinly crosswise. Finely chop the chipotle pepper in adobo sauce carefully, washing your hands and utensils immediately after handling to avoid irritation.
- Make Chipotle Ketchup: In a small bowl, mix the ketchup with some or all of the finely chopped chipotle pepper depending on your preferred spice level. Season with salt and pepper to taste, adjusting for balance.
- Combine Meatloaf Mixture: In a large bowl, combine ground beef, egg, minced garlic, panko breadcrumbs, chopped golden raisins, and meatloaf spice blend. Season with salt and pepper. Gently mix with your hands until just combined, taking care not to overwork the meat.
