Instructions
- Prepare the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch. Combine the rice, water, and a pinch of salt in a pot. Bring to a boil, then cover and reduce the heat to low. Let it simmer gently for 12-15 minutes until the rice is tender and fluffy.
- Cook the Chicken: Heat the olive oil in a skillet over medium-high heat. Add the sliced chicken breast and cook for 5-6 minutes, turning occasionally, until the chicken is golden brown and cooked through.
- Stir-Fry the Vegetables: Add the sliced carrots, red bell pepper, garlic powder, dried herbs, salt, and pepper to the skillet with the chicken. Stir-fry everything together for 3-4 minutes until the vegetables are tender-crisp but still retain some bite.
- Steam the Broccoli: While the stir-fry cooks, place the broccoli florets in a steamer basket set over boiling water. Cover and steam for 4-5 minutes until the broccoli is bright green and tender but not mushy.
- Serve: Plate the chicken and vegetable stir-fry alongside the fluffy white rice and steamed broccoli for a balanced and wholesome meal.
