Instructions

  1. Prepare the filling: In a mixing bowl, combine the finely diced rotisserie chicken, softened cream cheese, buffalo sauce, shredded sharp cheddar, shredded mozzarella, and dry ranch seasoning. Mix thoroughly until a uniform filling is achieved.
  2. Assemble the egg rolls: Lay one egg roll wrapper on a clean surface. Spoon about one-third cup of the buffalo chicken filling into the center of the wrapper. Lightly wet the edges of the wrapper with water to help seal it.
  3. Roll the egg rolls: Fold the bottom corner of the wrapper over the filling, then fold in both sides. Roll tightly towards the top corner and seal the edges securely to prevent leakage during cooking.
  4. Preheat the air fryer: Set your air fryer to 400°F (204°C) and allow it to preheat for several minutes.
  5. Air fry the egg rolls: Place the assembled egg rolls in the air fryer basket in a single layer. Lightly spray the egg rolls with cooking spray for extra crispiness. Cook for 3-4 minutes per side, turning once, until the wrappers are golden brown and crispy.
