Description

These Birthday Cake Cinnamon Rolls combine the classic warm cinnamon roll with a festive twist of colorful rainbow sprinkles and a rich vanilla-almond frosting. Soft, fluffy, and perfectly sweet, they make a delightful treat for birthdays or any special occasion.

Ingredients

Scale

Dough Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 tablespoon vanilla extract

Filling

  • 2 teaspoons cinnamon
  • 3/4 cup packed brown sugar
  • 1/4 cup unsalted butter, softened

Frosting

  • 1 1/2 cups powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon almond extract (optional)
  • 1 tablespoon vanilla extract (for frosting consistency and flavor)

Topping

  • 1/4 cup rainbow sprinkles

Instructions

  1. Activate Yeast: Warm the milk and melted butter together until just warm to the touch, ensuring it’s not hot to avoid killing the yeast. Stir in the granulated sugar, then sprinkle the instant yeast over the surface. Let it sit for 5–10 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Prepare and Knead Dough: Add the eggs, vanilla extract, salt, and flour to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for 6–8 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover it, and let it rise in a warm place for about 1 hour or until it doubles in size.
  3. Roll and Add Filling: Once risen, roll the dough into a large rectangle. Spread the softened butter evenly over the surface. In a small bowl, mix together the brown sugar and cinnamon, then sprinkle this mixture evenly over the buttered dough.
  4. Shape Rolls and Second Rise: Starting from one edge, roll the dough tightly into a log. Slice the log into 12 even rolls using a sharp knife or dental floss. Place the rolls into a greased baking dish, cover them again, and let rise for 30–45 minutes until they become puffy.
  5. Bake the Rolls: Preheat your oven to 350°F (175°C). Bake the cinnamon rolls for 20–25 minutes or until they are golden brown on top and fully cooked through the center.
  6. Prepare Frosting and Decorate: While the rolls bake or cool slightly, whip together the powdered sugar, heavy cream, vanilla extract, and almond extract until smooth and creamy. Spread this frosting over the slightly cooled rolls and generously top with rainbow sprinkles for a festive birthday look.

Notes

  • Make sure the milk is only warm, not hot, to activate yeast properly.
  • Kneading the dough well develops gluten, which gives the rolls their soft and fluffy texture.
  • The almond extract in the frosting is optional but adds a lovely nutty flavor that complements the cinnamon.
  • Can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days. Reheat before serving.
  • For a dairy-free version, substitute butter with a non-dairy alternative and use coconut cream instead of heavy cream.
