Ingredients
Scale
Zucchini Fries
- 4 medium zucchini (about 1 to 1 ¼ lbs.)
- ¼ cup all-purpose flour (or gluten-free 1-to-1 flour)
- 1 large egg
- 1 Tbsp. milk (regular, oat, soy, or nut-based)
- ½ cup plain breadcrumbs (gluten-free if needed)
- ½ cup grated Parmesan cheese
- 1 tsp. salt, to taste
- ¼ tsp. black pepper, to taste
- 1 tsp. Italian seasoning
- ¼ tsp. garlic powder
- Fresh curly parsley, finely chopped, for garnish
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it’s hot enough to bake the zucchini fries to a crisp texture.
- Prepare Zucchini: Trim the ends from each zucchini and slice them lengthwise into quarters to create fry-like strips.
- Mix Coatings: In one shallow bowl, whisk together the egg and milk. In a second shallow bowl, combine the breadcrumbs, Parmesan cheese, salt, black pepper, Italian seasoning, and garlic powder. Place the flour in a third shallow bowl.
- Coat Zucchini: Take 2-3 zucchini strips at a time and toss them in the flour, shaking off any excess. Dip the floured strips into the egg wash, letting any extra drip off. Finally, coat each strip thoroughly with the breadcrumb mixture, pressing gently to help it adhere. Repeat until all zucchini are coated.
- Arrange on Baking Sheet: Line a large baking sheet with parchment paper. Arrange the coated zucchini strips in a single layer, ensuring they are not touching to allow even baking and crisping.
- Bake Fries: Bake the zucchini fries for 18-20 minutes, flipping them halfway through the baking time to ensure both sides become golden and crispy.
- Garnish and Serve: Once baked, sprinkle the fries with finely chopped fresh parsley. Serve warm with your favorite dipping sauces such as ketchup, ranch, or marinara. Enjoy your crispy baked zucchini fries!
